Shrimp Fried Rice


2 1/2 cups cold cooked rice
2 tablespoons peanut oil or sesame oil, divided
1/2 pound small shrimp
1/2 cup diced turkey ham
2 scallions, thinly sliced
1/2red bell pepper, seeded, diced
1/2cup frozen peas, thawed
2 large eggs
1 cup bean sprouts
1 tablespoon soy sauce

Stir rice to separate grains. In large nonstick skillet or wok, heat 1 tablespoon of oil. Add shrimp and turkey. Cook, tossing lightly, just until shrimp turn pink, about 1 minute.

Transfer shrimp & turkey to plate, keep warm. In same skillet heat remaining 1 tablespoon oil. Add scallions, bell pepper and peas, cook, stirring as needed, until softened, about 3 minutes
